Ingredients
1poundground turkeyor chopped leftover turkey
1/2cupplain mashed sweet potato
1large egg
1/4cupoat flour
1tablespoonfinely chopped curly parsley
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, combine 1 pound ground turkey (or chopped leftover turkey), 1/2 cup plain mashed sweet potato, 1 large egg, 1/4 cup oat flour, and 1 tablespoon finely chopped curly parsley. Mix thoroughly until well combined.
Roll into marble-sized meatballs for training or quarter-sized meatballs for snacks, spacing 1 inch apart on the baking sheet.
Bake for 12–16 minutes until lightly golden and firm.
Cool completely before serving.
