Ingredients
1cupshredded turkey or chicken
1/2cuppeas and carrots
1/2cupchicken, turkey, or bone broth
1large egg
1cupoat flourheaping if homemade
1/2cupplain mashed potatoes
1pinchdried parsley
Instructions
Preheat oven to 350°F. Grease a mini muffin pan using cooking spray.
Mix turkey, peas and carrots, broth, egg, and oat flour until well incorporated.
Spoon mixture into each cup, filling 3/4 full.
Top with mashed potatoes.
Bake 18–22 minutes, until lightly golden and set.
Cool a few minutes, run a butter knife around edges, and gently pop out each pot pie.
Cool completely before serving. Add parsley for presentation if desired.
